Double Chocolate Chip Cookies

Double Chocolate Chip Cookies

Ingredients:
  • 1 1/4 cups butter, softened
  • 2 cups white sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups flour
  • 3/4 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi sweet chocolate chips

Preheat oven to 350 degrees F (176 degrees C)

Cream butter with sugar until light and fluffy.  (This takes longer than you think - wait it out a bit!)

Add eggs and vanilla and beat well. 

Combine flour, cocoa, baking soda, and salt, then blend into the creamed mixture. 

Stir in chocolate chips. 

Drop by teaspoonfuls onto cookie sheets. (Line with parchment for easy cleanup!)

Bake at 350 for 8-9 minutes. Do not over bake - you want these cookies to be a bit on the "soft and chewy" side, not crunchy.

Remove from oven and let cookies rest on pan for 1 minute before transferring them to a cooling rack. 

The cookies will flatten out a bit while cooling, it's okay!


Variations:
  • For black-and-whites, swap half or all of the chocolate chips for white chips.
  • For mocha cookies, add a teaspoon of instant espresso powder along with the eggs and vanilla.
