This is one baking ingredient that I don't often have on hand, and being able to substitute saves me a trip to the store.
Sweetened Condensed Milk
Mix in a blender until thickened:
- 1 cup dry nonfat milk powder
- 1/2 cup boiling water
- 2/3 cup sugar
- 3 tablespoons reduced-fat margarine, melted
- Pinch of salt
Store in a tightly covered container in the refrigerator.
This recipe yields the same amount as 1 can of Eagle Brand milk and can be used in any recipe calling for it.
Safety note: Putting boiling water into your blender and sealing it shut may cause the lid to pop off! Take out the centre cap, put a cloth over top to catch splatters, hold the lid down, and blend at a low speed.
If you don't have powdered milk, try this alternative recipe, which is made on the stovetop:
- 2 cups whole milk
- 1/4 teaspoon salt
- 1/2 to 3/4 cup sugar
- 1 teaspoon vanilla extract
Combine the milk, salt, and sugar in a medium saucepan over medium-high heat. Bring to a gentle simmer, whisking until the sugar is dissolved. Reduce the heat and stop stirring. Simmer uncovered, stirring occasionally to scrape the bottom of the pan, 30-45 minutes until reduced by half.
Tips: Continuing to whisk after reducing the heat may create crystals. If you see the milk starting to foam, lower the heat immediately to prevent burning or boiling over.
